Menu Plan Monday 1-19-09
I’m trying something new here. There’s this blog called Organizing Junkie that hosts Menu Plan Monday, where lots of other moms post links to their blogs where they’ve shared their menu for the week. I thought it sounded like fun and a great motivation. (I’ve been menu planning for a while, but I’m not always consistent with it, and sometimes I only plan 2 or 3 days’ worth right before I go to the store, thinking I’ll figure out the rest of the week in a few days. But my week goes much smoother when I plan a whole week at a time.) I’ll try to include some recipes as well.
A word about my cooking habits: I don’t cook a new dinner each night. The whole “cooking for 2” thing is one of the silliest ideas I’ve heard. I cook for 4 or 6 and we eat it until it’s gone, so I only have to cook a few times per week. So usually my menus will consist of just a few meals that will last the week.

Monday (same thing we had Sunday): Broiled chicken sandwiches, oven-baked sweet potato wedges*, fresh pineapple
Tuesday (guests for dinner, so probably not much leftovers): Roast chicken and potatoes, green beans, homemade rolls
Wednesday (unless there are leftovers from Tuesday): Lemon-pepper chicken breasts, sugar snap peas w/ orange-ginger butter, rolls
Thursday: Chicken tacos w/ fixins, fresh fruit
Friday: same as Thursday
Saturday: Homemade pizza, salad
Sunday: same as Saturday

*Recipe (sort of): Oven-Baked Sweet Potato Wedges
Peel sweet potatoes and slice lengthwise into wedges. Toss with a little vegetable oil (just enough to coat) and a little salt (not enough to make them taste salty though); spread in single layer on baking sheet that has been lined with foil and sprayed with cooking spray. Bake at 400°for 15 minutes; flip wedges over and bake for 15 more minutes. As soon as they come out of the oven, toss with some cinnamon-sugar. If you like, you can make a dipping sauce with melted butter and brown sugar.
You are so lucky that you are able to cook once and eat 2 meals. Although I love to cook, I would love that luxury once in a while!
Looks good! Your leftover idea is great. I cook extra so that hubby has lunches and we have a leftover night every week. Your daughter is too cute.
That sweet potato recipe sounds wonderful – at what temp do you bake ’em?

I never got that whole ‘cooking for 2’ thing either! Leftvoers are a wonderful thing – they make great lunches or they keep you out of the kitchen another night. Love that!
We’re doing roasted sweet potatoes this week, too, but I do mine savory. I never thought about doing cinnamon & sugar on them roasted…might have to give it a try. :)

I totally should start doing this… it’s wild around here trying to decide what to cook. I don’t get home until 4:00 and we eat at 5:15-5:30 so I feel like a chicken with my head cut off….
Yeah, it helps a lot. Not only can you plan, but you can prep ahead too. Like, you could wash and cut veggies or brown ground beef the night before, if you had more time then.
