Cooking for 2 1/2

Anna is… get this… hungry! Finally! I’ve been waiting for this for months. She’s starting to eat a pretty good variety of things and eat pretty well. I think her recent encounter with barbecue clued her in to the fact that there’s some really tasty food out there to be had.

I’m realizing I’m going to have to change the way I plan our meals. Up until now, I’ve fixed Anna a bowl of yogurt/cereal for dinner, then just offered her a few bites of whatever we’re having, knowing she probably wouldn’t have much to do with it. But now she’s eating our dinner! I’ll have to shift my thinking a bit and actually prepare enough for her too. No more cooking a casserole that serves six and eating it for three nights; it will probably only last two now, with a little leftover.

I actually think it’s a little easier to plan meals for more than two. It makes it seem like a more legitimate enterprise to me.

And, you won’t get as tired of the “same-old-thing again tonight.” Go Anna!

I’ve been reading your Monday meal plans and thinking “How can she make that last 3 nights in a row?” Then I remember that Anna is still small…So I’ve been secretly waiting for the day when you say, “leftovers? what leftovers?”

I have a small piece of advice from my soapbox, and one that it looks like you’re already going to follow. PLEASE make Anna eat what you’re having. I know people who make one meal for themselves and one meal for the kids. I think that is absolutely ridiculous! Once they can handle finger foods, they should start getting what everyone else at the table is having. One trick I use to make this happen is to make sure there is at least one thing that you know the kids will eat. That way you don’t have to force them to eat foods they don’t like, but they don’t feel like they are getting special treatment either.

    Ok. Down soapbox! Down!

Not sure what the inclement weather policy is either. I think if it is just sprinkling, I will still run. If it is a downpour, I will be sleeping in!
Good luck tomorrow! That is awesome! See ya then!
