Menu Plan Monday 7/27/09
I’m going to start trying something new with my menu plan. I’d really like to work more meatless meals into our diet, for reasons that will probably be the subject of another blog post once I get my thoughts together. No, I’m not going to become a vegan. :) My goal is to have fish one night (which should work well until I run out of the salmon in my freezer that I bought on sale), beef or chicken three nights, and meatless three nights. Don’t hold me to that, ok? It’s just a loose guideline for now. And feel free to send me your favorite recipes for filling meatless entreés!
Monday: Chicken & bacon quiche (leftover from Sunday), carrots, rolls
Tuesday: Garlic-potato soup, salad, French bread
Wednesday: Baked salmon, sautéed green beans, brown rice w/ mushrooms
Thursday: same as Tuesday
Friday: Beef tacos, fresh fruit, chips & homemade salsa
Saturday: same
Sunday: Breakfast for dinner—whole-wheat waffles (didn’t get around to trying this recipe a couple of weeks ago, so trying it now), scrambled eggs, fresh fruit

Recipe: Garlic-Lemon Marinade for Salmon (from Paul Kirk’s Championship Barbeque)
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/4 cup olive oil
- 2 cloves garlic, pressed
- 1 tsp. fine sea salt
- 1 tsp. freshly ground black pepper
Makes enough to marinate 1 1/2 pounds salmon fillets. Whisk ingredients together in small nonreactive bowl. Rinse salmon and pat dry with paper towels. Place fillets in nonreactive baking dish or zip-top plastic bag. Cover with marinade, coating completely; cover dish (or seal bag) and refrigerate for 1 hour. (Note: this marinade is for grilled salmon, which we’ve made before, but I’m going to see if it works for the oven as well.)
Jennifer, we’ve picked up eating tacos from y’all. When we run out of ground beef, there are usually other ingredients left over, so I have a meatless taco for lunch the next day. Ingredients may include (but are not limited to) black beans, salsa, lettuce, tomatoes, guacamole, onions, shredded cheese—you get the idea. If we’ve also finished all the tacos, I dump all the stuff on top of a bowl of lettuce & add some dressing. I think either one of these would work for a dinner as well as lunch.
In the cooler weather, a favorite of ours is a loaded baked potato and a green salad.
I also love (but Kevin doesn’t) beans and rice. I cook the dried beans with a whole onion, salt and pepper (or ham seasoning–does that count as meatless?), Italian seasoning, or a can of Rotel.
So my wife announces that she intends to make me eat less meat and more veggies. This is also post #666 on her blog. Coincidence? Yeah, right.

We bulk up spaghetti sauce with veggies (spinach, mushrooms, bell peppers, carrots, sun-dried tomato, olives, etc…) such that you don’t have to include meat.
I’m a big fan of meat-free meals, but Kevin thinks he hasn’t eaten anything if there’s no meat. I think it’s a man thing. :)
I have a couple of soups that I like a lot — a creamy tomato basil and a baked potato soup.
I also like to make little mini pizzas with pita bread as the crust. You can put whatever you want on those.
Chicken and bacon quiche sounds delicious…I will have to try it!
I love the fish marinade recipe. I’ll be it would also work on white fishes.

We love the spinach shells in the McMillan Cookbook on page 52. People who don’t like spinach love these. The recipe makes a large dish but you can divide the servings in smaller dishes and freeze them for later. Hope you try them!

I haven’t had potato soup in a long time. Sounds so good, I’ll have to make it soon.
My husband is the same way with meat. He feels he’s not really had a meal without some kind of meat. Guys are so weird sometimes:)
