Menu Plan Monday 4/6/09

This isn’t a very exciting week, I’m afraid—I’m making two things that last three days each, so not a lot of variety. But this is just one of those weeks I want to focus on other things besides meals so I wanted a lot of leftovers. The baked ziti is awesome, by the way, and easy.

Menu Plan Monday 3/30/09

Well, I changed plans Sunday and made chicken rice casserole instead of chicken tacos, so we have leftovers from that for a couple of days. Here’s what’s cookin’ at the Felio house this week:

Wednesday: Sausage/potatoes/green beans skillet dish, salad, bread

Due to Anna’s birthday party on Saturday, having houseguests for the weekend, Anna’s actual birthday yesterday, and knowing we have plenty of leftovers to get us through several days, I’m just now thinking about food for the week. The chicken, soup, and ham are already in the fridge so I don’t really have to cook until Friday!

Monday: Leftover fried chicken and biscuits, green beans

Tuesday: Vegetable beef soup, salad, cornbread

Wednesday: Grilled ham & cheese on sourdough, sweet potato wedges

Thursday: Vegetable beef soup, baked potatoes, French bread

Friday: Parmesan crusted chicken, green beans, salad

Saturday: Burgers (already made and frozen), potato wedges

Menu Plan Monday 3-9-09

On Saturday David grilled a whole chicken, two flat-iron steaks, a batch of veggies, and some burgers, so we have most of that left to get us through the week. We froze the burgers and will pull them down as needed. If you’re grilling, always grill a lot—you can eat on it for several days and/or freeze some for later, and the majority of your cooking’s done!

Tuesday: Steak tacos, fresh fruit, chips & homemade salsa

Saturday: just snacks for supper because we’ll eat fish ‘n’ chips from Cregeen’s in the afternoon following the St. Patrick’s Day parade!

Last week we postponed Saturday’s pizza until Sunday, so we still have leftover pizza for Monday. We’re planning to grill next Sunday, as long as the weather is nice, which should carry us well into the next week. Remember to check out Organizing Junkie’s Menu Plan Monday for more ideas.

Wow, I can’t believe I don’t have a blog entry between this one and last week’s menu post. Not much has happened, I guess. So here’s what the Felios are dining on this week:

Menu Plan Monday 2-16-09

I’m a little later than usual with this one because since it is a long weekend, today is more like a Sunday and I’m just now getting around to planning and making my grocery list. Last week we ended up going out on Friday and moving the baked ziti to Saturday, so there’s no grill food, but there’s leftover ziti for dinner tonight. This week I’m trying to make meals out of stuff I already have and buy as little as possible (which is probably what I should be doing every week). I think I only need a few things from the store!

Monday: Leftover baked ziti, green salad, French bread

Tuesday: Grilled ham & cheese on sourdough, potato wedges

Wednesday: Chicken rice casserole, green beans, bread

Thursday: same (except maybe change the veggie)

Friday: same

Saturday: Lemon-pepper chicken, potatoes & green beans (a Green Giant frozen thing I picked up cheap)

Sunday: Oatmeal-cinnamon waffles, scrambled eggs, sautéed apples

Menu Plan Monday 2-2-09

David grilled last night (we postponed it from Saturday to Sunday). When we grill, we make enough for about a week, hence the repetition you see here. We have guests on Tuesday, so I’m making my “company dinner” that night, then it’s back to the grill food. So it may not be a very interesting menu to read, but it sure is easy on me!

Tuesday (w/ guests): Roast chicken and potatoes, green beans, rolls
