Menu Plan Monday 6/29/09

Not much of a menu week here. I really haven’t felt like cooking or thinking of food much lately with the heat and the extra stuff we’ve had going on. But I haven’t missed a week since I started doing this, so here it is:

Monday: Pizza at the park

Tuesday: Burgers, potato wedges

Wednesday: same

Thursday: Lemon-pepper chicken, sugar-snap peas, carrots

Friday through Sunday: I think we’ll be eating dinner with my family most nights; I’ll just be making some side dishes.

Menu Plan Monday 6/15/09

It’s grill week! That means the bulk of my dinner cooking is done for the week already. But I have to remind myself that 6 burgers don’t last 3 meals anymore when Anna eats it too. I never know if she’s going to eat meat or not (I usually just give her a couple of bites of mine and see if she eats it, then give her more if she wants), but tonight she put away almost half a hamburger patty!

Well, it’s a bit of a boring menu plan this week. But here it is, nonetheless.

Monday: It’s our anniversary, so I’m thinkin’ I’m not cooking.

Tuesday: Manicotti (that we didn’t have last week), salad, foccacia

Wednesday: Chicken rice casserole, green beans, carrots

Thursday: same

Friday: dinner with family

Saturday: dinner with family

Sunday: Leftover chicken rice casserole that I’ll freeze after Thursday’s dinner

Menu Plan Monday 5/11/09

Last week’s Chicken Francese was a success and something I’ll definitely try again. It took me a long time because I had to keep looking at the recipe, but meals always go faster the more you make them. We ended up not grilling on Sunday due to the weather (picked up Moe’s instead—yum!) so I don’t have grill food to carry us into this week. If it’s nice this weekend, maybe we’ll ditch the tacos and grill instead.

Menu Plan Monday 5/4/09

Here’s what’s going on in the Felio kitchen this week. The Skillet Tamale Pie has a Mexican flavor, in honor of Cinco de Mayo… any excuse to eat Mexican food! The Chicken Francese is a new one for us; I hope it turns out well. I have no idea what you’re supposed to serve with it, but it has a sauce, so rice is always good to put a sauce on. Cooking for 2 1/2

Anna is… get this… hungry! Finally! I’ve been waiting for this for months. She’s starting to eat a pretty good variety of things and eat pretty well. I think her recent encounter with barbecue clued her in to the fact that there’s some really tasty food out there to be had.

I’m realizing I’m going to have to change the way I plan our meals. Up until now, I’ve fixed Anna a bowl of yogurt/cereal for dinner, then just offered her a few bites of whatever we’re having, knowing she probably wouldn’t have much to do with it. But now she’s eating our dinner! I’ll have to shift my thinking a bit and actually prepare enough for her too. No more cooking a casserole that serves six and eating it for three nights; it will probably only last two now, with a little leftover.
